How to Make Pumpkin Muffins for Babies after 12 months

This recipe is aimed at parents looking for nutritious and easy-to-digest snacks for babies after they’ve started eating solid foods. Pumpkin is a great ingredient as it’s rich in fiber, which aids digestion, and it’s naturally sweet, which appeals to babies’ tastes.

Ingredients

Pumpkin (about 200g)

1 cup of whole wheat flour

1/2 cup of oats

1/2 cup of mashed banana

2 eggs

1 tablespoon of baking powder

A pinch of cinnamon (optional)

A little bit of water or breast milk/formula (if the batter is too thick)

Instructions

  1. Prepare the Pumpkin: Steam or bake the pumpkin until soft, then mash it well. Let it cool before using.
  2. Mix Wet Ingredients: In a bowl, mix the mashed pumpkin, banana, eggs
  3. Add Dry Ingredients: Combine the whole wheat flour, oats, baking powder, and a pinch of cinnamon in a separate bowl. Slowly mix the dry ingredients into the wet mixture.
  4. Adjust Consistency: If the batter seems too thick, add a little water, breast milk, or formula to reach the desired consistency.
  5. Spread butter on the mold.
  6. Pour the dough into a mold to cover the bottom a little.
  7. Add sweet potato & banana mousse using a piping bag and cover the dough again on top of it.
  8. (After you’re done, bang the frame on the floor about three times to remove air.)
  9. Bake: Preheat the oven to 180°C (350°F)
  10. Turn the air fryer at 160 degrees for 7 minutes. Just in case, I recommend you to divide it into 4 minutes and 3 minutes instead of 7 minutes at once.
  11. Cool and Serve: Let the muffins cool completely before serving them to your baby.
